I am busy cooking for my little darling nowadays. Having finish work at 6pm and the 'ulu' cck is ONE HOUR mrt journey from town, i can only reach home at pathetic 7pm to start cooking fast enough to save Carrie from starvation.
So far, i'm proud to say i am meeting the 'timeline' of serving dinner not later than 8pm, usually at 7.30pm. :) This, i must say, 'ENERGY' is the keyword in my life now.
To illustrate this, here's my typical life after work.
7pm - reach home.
Change into home clothes
And head straight for the kitchen.
7.30pm - dinner served
Eat / Feed / Chase / Nag / Persuade
8.30pm - Wash dishes
9.00pm - play with Carrie / watch tv / relax a bit
9.30pm - change Carrie into her pyjamas
10.00pm - make milk for carrie
(you may wonder "WHAT ?! change her into pyjamas require 30 mins ?!? -- the answer is YES, now that she is particular about which diaper she want to wear etc etc. Just getting her to the changing bed takes 15 mins)
10.30pm - finally she finishes her milk and off she goes to bed
Then 'life' starts...
10.30pm - I finally get to bathe
10.50pm - out of bathroom (what ?! took me 20 mins to bathe ? -- answer is YES, cos i need to handwash Carrie's school clothes and mine as well)
11.00pm - Bring out the chopping board and prepare ingredients for tomorrow's dinner (cut, chop, slice) and not forgetting washing up
11.15pm - FINALLY...watch my favourite kang1 xi1 show for a good laugh (while packing Carrie's school bag for t0morrow of course, no lazy hands !)
12 midnight - Zzz...
Though its tiring but having see my mum balanced work and family when i'm young, i learnt and admire her energy level. Even till today, her energy level is still way beyond me. I've once asked her, "why do you have so much energy ? Don't you feel tired at all ?"
And her reply ? "Just don't stop" The moment you choose to sit down and rest, its tough to re-generate the energy again. If you don't stop, the energy carries through.
With my 'hectic' timeline above, there's no time to rest as well. One must make full use of time. Luckily with my favourite kitchen gadget right now -- Mr Slow Cooker, making it possible for my carrie to enjoy hot nutritious soup thats brewed for many hours for dinner. I will continue with the slow cooker episodes when i post those soup creations.
Lets go back to monday's dinner for now. I shall elaborate on what to prepare the night before, what to do when one reaches home, the whole sequence of it cooking it, in hope another super working mummy can share tips as well and we all learn from each other.
Menu for the Day - pumpkin rice & tomato egg drop soup
TO DO LIST - night before
1) remove pumpkin skin and cut into dice
2) bring small packet of frozen minced pork with fish paste out of freezer into fridge to thaw (so you can cook it the next day)
3) bring together all the ingredients (even those that you don't have to cut up, just so when you reach home, you don't have to search the whole fridge for one garlic !)
TO DO LIST - Actual day
1) wash rice and standby
2) dice garlic / onion
3) heat wok, put oil, and throw garlic and onion in.
4) after there's fragrance from garlic and onion, throw pumpkin dices in. Stir for a while.
5) Throw washed rice in. Stir.
6) Season with light soy sauce, sesame oil. Stir.
7) Pour everything into rice cooker, pour water and press Cook.
(Rice is done !)
1) Put ikan bilis into tea bag and throw it into the pot of water to be boiled. (ikan bilis stock ! and by having it in the tea bag meant the soup will not have e.g. broken head of the ikan bilis, you can just take the whole tea bag and throw it !)
2) Cut tomatoes and throw them in when the water boils
3) After a while, throw the minced meatballs in
4) When all the meatballs floats, beat the eggs and pour it into the pot in rounds. When the egg is pour in, DON"T STIR. Give it sometime to solidify. (you can off the fire straight after the egg is poured in)
5) Season with salt and sesame oil. Done :)
