This is this weekend's baking recipe ! Carrot Walnut cupcake with lemon cream cheese frosting !
For 24 cupcakes, i hand grated 6 big carrots myself ! The frosting is a winner ! really delicious. Cut the icing sugar by half though to make it less sweet, very yummy !
