The initial planned menu consists of steamed fish and pumpkin rice. But after knowing my little nephew is coming for dinner and he doesn't take fish, woooo...of course i gotta whip up something special for my little food fan, in order not to disappoint him !
Here's what i cooked that night :
1) Chicken Winglets Stew
I got this recipe off a blog of a super mummy who has tons of recipes and very useful tips on motherhood ! See here for recipe. My version looks darker in colour as i prefer it sweeter and put in more brown sugar. Plus i only have dark brown sugar at home so it makes a difference in colour !
With the initial pan-frying and the 20 mins stewing part, this dish is a winner ! I can't wait to cook this dish again ! The next time i'll use drumlets instead of winglets as its easier for the kids to hold one end and eat it. The sauce blends perfectly well with rice.
I loved it !
2) Omelette with Cheese
Not knowing how my little nephew takes to pumpkin rice, an omelette with cheese can't go wrong at all ! (didn't take pic of this omelette, looks exactly the same to the one i made for Carrie in my previous post) Got him to decorate the omelette as well with ketchup.
3) Steamed Fish
Having thawed the fish already, i continue with it for Carrie. Steamed fish is the easiest and least time consuming dish. Just place it in the rice cooker while you cook the rice and thats it ! Save effort, save time ! My favourite dish to cook if i'm tight for time ! And most importantly, totally healthy.
4) Pumpkin Rice
A good way to get vegetables into the kids meal. One of my favourite rice dish ! Have posted this before.
